Pizza Romana-Recipe

Ingredients:

  • Kg. 10    Flour  Farina tipo Pizza e Focaccia/Pizza al pezzo/Pizza in teglia/00 345
  • l. 7         Water (70%)
  • g. 500    Olio extra vergine d'oliva/Oil(5%)      
  • g. 300    Lard(3%)
  • g. 250    Salt (2.5%)
  • g. 120    Malto (1.2%)
  • g. 120    Sugar (1.2%)
  • g. 200    Yeast (2%)
  •  Procedure:

    Mix all the ingredients for 10 minutes at speed 1, then add the remaining water (2 lt.) at speed 2. Put the dough to rest for 60 minutes in a tub well greased.
    Let the dough rise. Shape the pieces. Let rest for about 40 minutes. Add salt, oil and rosemary.
