  • Kg. 10 Farina tipo Genzano                                        
  • l. 6.5   Water (65%)                 
  • g. 200 Salt (2%)             
  • g. 250 Yeast (2.5%)

Procedure:

Mix all the ingredients for 7 minutes at speed 1 and 5 minutes at speed 2.

Let the dough rest for 50 minutes.

Produce pieces of 600 g. 1250

Put in a proofer for 60 minutes at 32-35 ° with humidity R. equal to 75/80%.
