- kg. 8 Flour Grezza tipo 2
- kg. 2 Flour Farina Foglia Rossa/ Antigrumi Frumenta
- kg. 1 Lard (10%)
- g. 200 Salt (2%)
- g. 100 Yeast (1%)
- l. 5 Water (50%)
In the bowl of a food processor combine the yeast, sugar, flour and salt. Add the water until the dough is smooth and elastic.
Place dough in bowl, and cover with a damp cloth. Put in a warm spot to rise until double in size, about 1 hour.
When the dough has doubled in size, place it on hot grill and cook about 1/2 minutes.
