Focaccia (Water 70%)
- kg. 10 Flour Farina tipo Pizza & Focaccia/Pizza in teglia/Pizza al pezzo
- l. 7 Water 70%
- g. 200 Salt 2%
- g. 500 Olio d’oliva/Oil 5%
- g. 200 Yeast 2%
Mix all ingredients for 5 minutes at speed 1 add the water and continue for 6 minutes at speed 2 until the dough is smooth and homogeneous. Let the dough rest for 20-30 minutes. Pass the pasta with the cylinder and place it in baking pans greased with oil. Let rise for 25-30 minutes. Distribute over the entire surface a solution of 25 g. salt dissolved in 80 ml of warm water. Add oil (100 ml). Squeeze the dough with your fingertips, creating holes and put into the solution.Let rise for 80-90 minutes.
Bake in a moderate temperature.
Cooking time 25-30 minutes.
