Procedure:

Mix all the ingredients for 7 minutes at speed 1 and 4 at speed 2.

Let the dough rest for 15/20 minutes.

Roll out the dough to a thickness of about ½ inch.

Put the dough in a baking dish and pierce a hole with dough and cut the shapes. Add extra virgin olive oil and salt on the surface . 

Put in proover for 40-50 minutes at 35 ° C with humidity R. equal to 75/80%.
