- 150 g Flour farina azzurra
- 70 g butter
Sift the flour with the salt, add the butter and the water.
Knead well until dough is smooth.
Wrap the mixture into a sheet of plastic wrap and refrigerate for 30 minutes.
Preheat the oven to 180 ° C.
Pick up the dough and roll it out into a thin sheet (about 2/3millimetri).
Grease and flour the molds and put in the oven for 7/8 minutes.
Remove from oven and gently press the dough against the edges by pressing any air bubbles. Put in the oven for another 7/8 minutes.
Remove from oven and let cool completely.
Remove the folders from the molds and garnish as you like. Some suggestions: the salmon with crème fraîche, caviar, Russian salad or capricious, or lumpfish roe salmon with mayonnaise, pieces of fruit and yogurt.
