Bread with speck
- 300 g. Flour farina azzurra/Manitoba Cuore/Manitoba Frumenta
- 250 g. Speck
- 15 g. Yeast
- 100 g. butter
- 60 g. salt
Knead flour,water, salt, yeast and sugar together until the mixture is smooth, then add the butter and bacon.
Let the dough rest for 30 minutes in a covered casserole.
Divide the dough into pieces of equal weight and roll into balls, let them rest for 20 minutes covered with plastic. Put them in the baking pan with parchment paper and let rise for 50 minutes in the oven, and bake for about 25 minutes at 190° until the bread will have a golden surface.
