Quiche ai carciofi
- 200 g. Flour farina azzurra/Farina Frumenta/Pizza Manitoba/Pizza Cuore
- 40 g butter
- 4 g. salt
For the filling:
- 6 artichokes
- 3 potatoes
- 2 eggs
- 2 dl fresh cream
- 100 g. grated parmesan
- 200 g goat cheese
- olio extra vergine d’oliva/Oil
Prepare the dough working well all the ingredients until dough is smooth, then let the dough rest in refrigerator for about 30 minutes.
Clean the artichokes and cut into wedges, put them in boiling water with lemon juice, put them in a pan with 4/5 tablespoons of olive oil, add the potatoes, peeled and cut into slices with plenty of chopped parsley and garlic, add water and cook for 20 minutes doing it to dry well.
Remove from heat and let cool.
Roll out the dough , buttering the pan and put the dough inside.
Bake at 200 ° C for 50 minutes.
