Piadina (diretto)

 

Ingredients:

  • kg. 5  Flour Foglia Rossa/Foglia Oro
  • g. 500 Lard (10%)
  • g. 100 Salt (2%)
  • g. 25   Yeast (0.5%)
  • l. 2.5   Water (50%)

Procedure:

Mix the flour with lard, salt, yeast and water until the dough is hard enough.
Shape a  ball of desired weight, and let rest of 10/20 mi
Drill holes in the surface with the hole or pasta with a fork and cook the tortillas on a plate at a very high temperature.
