Spelt Bread

 

Ingredienti 

  • kg. 10 Flour Farro
  • l. 5.5   Water (55%)
  • g. 230 Salt (2.3%)
  • g. 400 Gran Madre (4%)
  • g. 250 Yeast (2.5%)
  • kg. 3   Sour dough (30%)

Procedure:

Mix the ingredients for 10 minutes at speed 1
Let the dough rest for 40/50 minutes. 
Divide into parts of 500 g of dough
Let rise for 45/55 minutes, in a cell with humidity at 30 ° R. equal to 70/75
Turn and cut along the outer edge.
Bake without steam at moderate temperatures.
Cooking time: 45/50 minutes
