Ingredients:

  • kg. 2.5 Yeast
  • kg. 10  Flour Rimacinato Speciale/Rimacinata Frumenta/Rimacinata Frumenta
  • l. 6      Water (60%)
  • g. 200  Salt (2%)
  • Procedure:

    Mix all the ingredients for 7 minutes at speed 1 and 5/6 minutes at speed 2.
    Let the dough rest for 60-80 minutes.
    Divide dough in weight of 300/500 g
    Cover with plastic sheeting, or put in prover to 120/150 minutes at 35 ° C with humidity R. equal to 75/80%, until the bread and leavened.
    Cut and bake at moderate temperatures with little steam.
    Cooking time 35-40 minutes.
